This month's Mushroom Mania webinar offered an intriguing journey into the world of mushrooms, revealing the complexities and nuances of this fascinating domain. The session, rich in detail and expertise, was particularly enlightening on mould-related issues, which often go under-explored.
Organic Farming Insights from Mark Foletta
The webinar featured Mark Foletta, a respected organic farmer from Benalla. Known for his award-winning approach, Mark supplies an impressive 2 tonnes of mushrooms per season, primarily to Melbourne's culinary scene. His insights into varieties like slippery jacks and saffron milk caps were enlightening, especially considering their popularity in high-end restaurants.
Mark delved deep into the mechanics of the mushroom supply chain and licensing in Victoria, sharing his firsthand experiences and challenges. He highlighted a significant issue in the industry: mushroom poisoning. According to Mark, although rare, there's a cyclical trend in accidental mushroom poisonings every five years, leading to temporary dips in sales. He pointed out that many of these cases are due to the deceptive similarity between a popular edible mushroom in Asia and the deadly Australian death cap.
Innovative Research by Matt Blow
The webinar also featured Matt Blow from the East Gippsland Shire, who presented his extensive research on mushroom products. Matt's presentation was a goldmine of information, covering topics from FSANZ health claims to the intriguing world of mushroom powders, droppers, tinctures, and the food-medicine interface. His ongoing work with the DH Food Unit promises further exploration into this area, with the commitment to keep the community updated on new developments.
Matt's contribution to the webinar was not just limited to his presentation. He generously provided a plethora of resources and information for members, ensuring that the knowledge shared was both accessible and actionable.
